Chocolate Mug Cake

Chocolate Mug Cake
I’ve been trying to avoid processed foods. This means if I have a craving for something delicious and dessert like I need to make it myself. Every now and then something chocolate-y and cake-y sounds really good. I found a recipe on Pinterest but I found it to be a little too dry so I continued to tweak it until it was the perfect consistency. And I put off sharing my recipe with you all until it was just right. This grain free, dairy free, gluten free mug cake is great in the morning for breakfast, before a run or even at night with a cup of hot cocoa. 
Chocolate Mug Cake 
Start with 3 tablespoons of coconut flour.  
Chocolate Mug Cake 
Add one ripe banana.
Chocolate Mug Cake 
Mix the banana and the coconut flour.
Chocolate Mug Cake 
Add an egg and mix in the batter.
Chocolate Mug Cake 
Add 2 tablespoons of coconut milk and mix.
Chocolate Mug Cake 
Add 2 tablespoons of agave or honey and mix.
Chocolate Mug Cake 
Add 2 tablespoons of ghee or butter of your choice and mix.
Chocolate Mug Cake 
Add 2 tablespoons of cocoa powder and mix. If you prefer dark chocolate, add 1 more tablespoon of cocoa powder.
Chocolate Mug Cake 
Microwave for 3 minutes and 30 seconds.Depending on how powerful your microwave is, you may need to add or subtract time.

Chocolate Mug Cake 
This morning I woke up and realized I was out of almond milk. I can’t drink my coffee without almond milk so I went to the grocery store at 7:30. It was quite nice. It was pretty much just me and the Mimosa guy. The best part was that I found nog heaven. I was reminded that Christmas is right around the corner! I love how many options there are for nogs now. I used to drink the soy version but this year I thought I’d give the coconut version a try. I came home and made an iced coffee and added So Delicious Coconut Milk Nog. I used to love the Egg Nog Latte at Starbucks but I don’t think I will need one this year. So Delicious Coconut Milk Nog is a wonderful substitute. (Side note - I can't believe how long my hair is getting!)
Chocolate Mug Cake 
I made bacon, eggs and potatoes for breakfast. I could eat this meal every day. It is so good and it provides great fuel for a run. I’ll be running four miles later on. I’m actually looking forward to it! I’ll be downloading some new music to get me through. Happy Saturday!!!
