Chinese Fried Rice

Nothing and I actually mean what I say by nothing can beat a perfectly made chinese fried rice. A great recipe can only be learnt by the people who makes it everyday and who are just pro. That is right I learnt this recipe from a chinese friends mom. She is just good not only in the sense of making chinese food but a great teacher as well. And when she makes chinese fried rice it is just on another whole new level every-time. I can say pretty much anything I want but if you give it a try than you`ll definitely know what I am talking about. Plus this chinese fried rice is perfect way to enjoy your otherwise boring healthy lunch ideas. Do let us know what you think about it in the end.

Ingredients:

  • 2 tbsp sunflower or vegetable oil
  • 8 oz Cooked long grain rice
  • 3 oz Smoked lean bacon, finely diced
  • 3 oz Peeled prawns
  • 2 -3 eggs, beaten
  • 4 oz Fresh or frozen peas, blanched
  • 6 Spring Onions
  • Salt and freshly ground black pepper
  • Spring onion tassels
Directions:
  1. Heat the oil in a large frying pan or wok, until just smoking.
  2. Stir in the rice and stir fry for 1 minute, then add the bacon and prawns.
  3. Continue to cook for a further 5 minutes over a high heat.
  4. Hint:
  5. if you slightly under cook the rice it won’t become a sticky mess.
  6. Stir in the beaten eggs, peas and spring onions, and cook for a further two minutes.
  7. Season to taste.
  8. Serve piping hot, garnished with spring onion tassels.
  9. serves 3-4
