The one cuisine that you love but have a hard time making it at home? That’s Indian food for me. I love chicken tikka masala but until this recipe could not get it to turn out perfectly. This one is easy and quick enough for a weeknight. It’s still not the prettiest recipe every but I promise it’s delicious!
And all the ingredients are things that I usually have on hand:
Rice or other cooked grains
Diced Tomatoes
Onion
Garlic
Salt/Pepper
Olive Oil
Garam Masala
Chicken Tenders
Plain Greek yogurt
- 1 cup basmati rice or other cooked grains
- 1 28 ounce can diced tomatoes
- 1 onion, finely diced
- 2 gloves garlic, minced
- Salt/Pepper
- 2 tsp garam masala
- 1½ pounds chicken tenders, cut into smaller pieces
- ⅓ cup plain Greek yogurt
- Cook the rice or grain. Set aside for serving.
- In a blender puree the tomatoes (with juices), onion, garlic, salt and pepper until a smooth sauce forms.
- Heat a large skillet and add in 3 tbsp of oil, pour in the garam masla and stir until fragrent (about 20 seconds) add in the sauce and cook until it thickens, about 12-15 minutes.
- Add the chicken and simmer until it is cooked through, about 8 minutes.
- Stir in yogurt and serve over rice or grains.
