Chicken in Cream Sauce and Alphabet Pasta!

I think the major advantage of cooking at home is what it rubs off on my kids. Take tonight for example. I didn’t do a full weeks shopping over the weekend, so I kind of had bits and pieces of things – not sure if I could even make a meal with what I had. I had to work late – it was almost 6 and I thought my only choice was to order out – or run to the store to find something quick to make – both which would have cost time and money!

My oldest son Paul who is 17, opened the freezer – checked the pantry shelf and said “why don’t you cut up the chicken, make a cream sauce and since we don’t have pasta, we have alphabet pasta!

I thought about it for a second and said “That’s a great idea!”

Serving Size: 6

Super quick dinner - inexpensive and feeds a lot! A great addition would be peas or asparagus too!

Ingredients

  • 1 tablespoon butter
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1/2 cup skim milk
  • 2 chicken breasts - cut into bite size pieces
  • salt and pepper to taste
  • 1 squeeze of chipotle mustard
  • Parmesan cheese (for sprinkling on top)
  • diced green onions (for sprinkling on top)
  • Two 7 oz. packages alphabet pasta

Instructions

  1. Cook alphabet pasta according to directions (about 10 minutes) drain and set aside.
  2. In a large skillet melt the butter and add the flour.
  3. Stir for a few minutes with a whisk.
  4. Add the chicken broth and skim milk and mustard. The sauce will start to thicken, use the whisk to make the sauce smooth and break up the flour.
  5. Add the uncooked chicken pieces into the sauce and cook on low until the chicken is cooked through.
  6. Add the cooked pasta and stir.
  7. Sprinkle with the Parmesan Cheese and green onions

The chipotle mustard I use in this recipe is so good! You can buy it at most grocery stores

Even if you don’t have this mustard, this dish was quick and easy and no leftovers! So that’s always a good sign.

My daughter Claire is away for a few days at camp with her whole 5th grade class – so it’s been different not having her here tonight – because she usually sings really loud in the shower
