A few weeks ago I volunteered to make cookies for the teachers appreciation lunch at my daughters middle school. Any time there is a request to make something, you can be sure I’m going to bring something!
This is a new cookie for me, I made it up as I went along and I must say they turned out great! I love the addition of the chia seeds. It gave it a great texture to the cookie.
Don’t know what chia seeds are or why you should add them to your diet? I wrote about them way back in 2009!
And did you also know you don’t have to use 2 WHOLE sticks of butter. For most cookies I just use 1 stick and they still come out great!

- 1 stick butter, softened
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 cups all purpose flour
- 1/2 cup Old Fashioned Oats
- 1 tsp. salt
- 1 tsp. vanilla extract
- 1/4 cup chia seeds
- 1/2 cup chocolate chips, chopped
Instructions
- In a mixer, add the butter and sugars until light and fluffy.
- Add the eggs and mix again for 1 minute. Scrape down the sides if needed.
- Add the flour, baking soda, baking powder, chia seeds, old fashioned oats, salt and vanilla extract.
- Mix again just until incorporated.
- Add the chocolate and mix only for another 30 seconds
- Bake at 375 degrees for 12 minutes.
I will definitely make these again, except keeping them for my family! Although to be honest – it’s nice that the teachers at school are being recognized – they deserve it after a long school year. Especially this year with the terribly cold and 80 inches of snow we had in Chicago!
