I love making my own salsa. I’ve made it so many ways and different variations. In last months Bon Appetit, there was a recipe for this charred tomatillo salsa that looked amazing.
I’ve mentioned now that all 3 of my kids are back in school, I have to get up 2 hours before I have to go to work to get the first 2 out the door. And since my office is less than 2 miles from my house – virtually having no commute, I have LOTS of time on my hands in the morning.
I knew yesterday I was making chicken tacos for dinner with this salsa. So as I was wondering what fun I could have in the kitchen with my free time when it occurred to me – I’ll make the salsa for tonight!
I got out the few ingredients needed: tomatillos, jalapeno, white onion, 1 lime.
To char the tomatillos and jalapeno, I just turned all the burners on my stove and placed a tomatillo on each burner. As one side gets blackened, I just keep turning it around until it’s all black.

Tomatillos come with a paper skin on them. Remove the paper and the outside of the tomatillo is actually kind of sticky - so rinse them off well before you get started.

Ingredients
- 8 tomatillos - paper skin removed and washed off
- 1 jalapeno
- 1/4 of white onion
- juice of 1/2 a lime
- pinch of salt
Instructions
- Char all the tomatillos until they are blackened on all sides. If you are doing it on your stove, do it one at a time on each burner, or if you are grilling out, grill them all together.
- Char the jalapeno until blackened.
- In a blender, add the blackened tomatillos and jalapeno, with the raw onion.
- Squeeze 1/2 of the lime in as well.
- Add a pinch of salt
- Mix together in the blender until you reach the desired consistency, I prefer a less chunky salsa, so I blended mine pretty smoothly. If you like a chunkier salsa, then just don't blend it as much.
I actually made fajitas instead of tacos, since I had extra onion from this recipe and a green pepper I needed to use up. I used it with my famous homemade fajita seasoning. I say famous because it’s by far the most viewed recipe on my site – it’s gotten thousands and thousands of page views
