There is something about a crisp and crunchy salad that makes my taste buds happy. Especially one with a great vinaigrette. Perfect for a quick lunch or dinner side this salad comes together in about 10 minutes. It helps when I almost always have all the ingredients on hand for this.
You can squeeze out an additional day for this if you have it covered well, but any more than that and it just isn’t the same. This is meant to be made and eaten right away.
The basil olive oil really does make the dish. The first time I made it using a good traditional olive oil and while it was tasty the basil made it that much better. I think I have at least 4 or 5 bottles of olive oil going at once, a more affordable one that I cook with and a high quality extra virgin olive oil for dressings and then a few flavored ones for something special. Basil, Tuscan Herb, Blood Orange, and Chili are all great starters for flavors.
Celery Apple Salad with Basil Lemon Vinaigrette

- 2-3 diced Honeycrisp or Pink Lady Apples
- 1 heart of celery, diced (about 2 cups)
- 5-6 large radishes, halved and sliced
- 1/4 bunch of flat leaf parsley, chopped
- 3 tbsp basil olive oil
- 1 large lemon, juiced
- Salt/Pepper
Instructions
In a large bowl combine diced apple, celery, radish and parsley. Set aside.
Whisk together olive oil, lemon juice, salt/pepper.
Pour over the salad and serve immediately.
