After the indulgent strawberry cake batter blondies that I posted yesterday I figured it would be a good idea to bring a few vegetables back into my life. This vegan cauliflower dish is fantastic, with a lot of antioxidant rich spices this will warm you up on a chilly day.
The key to this dish is getting the cauliflower to start to get a rich brown color. It gives it so much flavor. We ate this as an entrée but it would make a great side as well. Spicy vegetable deliciousness.
Cauliflower with Peas
Prep Time: 15 Minutes

- 2 tbsp canola oil
- 1 tsp cumin
- 1 tsp ground ginger
- 1 tsp turmeric
- 2 tbsp coriander
- 1 tbsp curry
- 1 clove garlic, minced
- 1/8 tsp cayenne pepper
- Salt/Pepper
- 1 small onion, diced
- 1 head cauliflower, cut into florets
- 1 cup frozen peas
- 1 pint grape tomatoes, halved
Instructions
Heat the oil in a large skillet.
Add the onion, garlic, ginger and cumin. Cook for about 2 minutes.
Add the cauliflower and cook until the cauliflower starts to caramelize. About 8 minutes.
Add the peas and tomatoes. Stir in turmeric, salt/pepper, coriander, curry and cayenne.
Cover and cook for 7 minutes. Serve immediately.
