Burrito Bake

While this isn’t very “Christmas-y” it is seriously delicious and makes enough to feed 2 for a few meals. It is cheesy goodness. A southwest style lasagna, just build with corn tortillas and the filling and bake.

 

Scott had about 3 serving of this and ate it for lunch for the next few days. It’s that good! And I wouldn’t call this the healthiest thing ever but sometimes it is worth it

Ingredients (Serves 4)

  • 1 onion, finely diced
  • 1 lb ground beef
  • 2 tbsp taco mix or Southwest style seasoning
  • 2 garlic cloves, finely diced
  • 1 cup frozen corn
  • 1 12 ounce jar salsa, divided
  • 1 can refried beans
  • 3 tbsp water
  • Corn tortillas
  • 2 cups shredded cheese

Instructions

Preheat oven to 350.

Combine beef, onion, seasoning and garlic in a large skillet. Cook over medium heat for 5-7 minutes. Set aside on a plate.

In a large bowl mix the beans, 1 cup of the salsa, and corn.

In a large baker or dutch oven place tortillas to cover the bottom. Spread with 1/3 of the bean mixture, 1/3 of the beef mixture and cheese. Cover with more tortillas and repeat with bean mixture, beef and cheese.

Top with remaining beef, bean mixture and cheese.

Bake for 50-55 minutes. Cut into pieces and top with remaining salsa.
