Brown Butter Sole

You know those omega’s you are always hearing about? We need to eat more of them! While I do take a fish oil supplement (as do the dogs) nothing compares to actually eating fish. I thank Trader Joe’s for having wild caught fish at a reasonable price. Especially when they have sole!

Sole is one of my favorite types of fish, I first had it when out for French food and had more of it when I was in Paris. It is seriously delicious and you often see it served with a brown butter and sage sauce.

A little bit of real butter is not going to hurt you, in fact, it’s good for you! And this is one of those incredibly simple dinners. Cook the fish, add in the butter and scrape up those little bits, add in sage and a bit of nutmeg and cook until it just starts to turn brown. Pour over the fish and try not to devour the entire piece in one bite.

Ingredients (Serves 4)

  • 2-3 large sole filet’s
  • Olive Oil
  • Salt/Pepper
  • 1/2 stick of butter
  • 1 tsp sage
  • 1/8 tsp nutmeg

Instructions

Heat olive oil in a large skillet, add fish and cook for 2-3 minutes per side. Remove and set aside.

Add in butter and let it melt, scarping up brown bits. Add spices and cook until butter just starts to brown.

Pour over fish, top with salt/pepper and serve immediately.
