Broccoli Salad with Olives Recipe

In this recipe you’ll find two great ingredient both good for fitness and detoxification purposes. It is advised to employ salad recipe in your meal to have a healthy lifestyle. It only take minutes to prepare from scratch. Salads recipe can be enjoyed on its own as well as with any meal as a side dish (e.g. your healthy lunch meal). Perfect for vegetarians and vegans.

Ingredients:

  • 1 small head broccoli, separated into florets
  • 1 large garlic clove
  • 2 tablespoons white wine vinegar or more to taste
  • 1 tablespoon capers, drained, rinsed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup olive oil
  • 3 celery stalks, thinly sliced
  • 2 green onions, thinly sliced
  • 6 pimiento-stuffed Spanish olives, sliced

Directions:

  1. Cook broccoli in lightly salted boiling water 5 minutes, until crisp-tender.
  2. Drain and rinse under cold water.
  3. In a blender or food processor, puree garlic, vinegar, capers, salt, and pepper.
  4. With motor running, add oil in a thin, steady stream; blend until smooth.
  5. Pour dressing into a large salad bowl.
  6. Thinly slice broccoli florets, and add to dressing.
  7. Mix in celery, green onions, and olives.
  8. Toss gently to coat evenly with dressing.

Servings: 4
