Bourbon Orange Glazed Pork

Changing it up with a little pork tenderloin; and not just your average pork tenderloin. This one has vegetables, a little bourbon and oranges. It stays incredibly moist and really does have amazing flavor. And what’s not to love with cooking with a bit of bourbon. This bourbon happens to be developed specifically just for food, add in some spices and extra flavor and it makes meat amazing.

Now I wouldn’t normally recommend cooking spirits, especially cooking wine. Please don’t ever buy cooking wine. It’s sugary, fake ingredients. Use real wine! Back to the bourbon, this is real bourbon with spices designed to be more concentrated. Rave Review is pretty darn fantastic.

But back to the pork. See how it has a bit of pink? That is how pork is supposed to be cooked. Please don’t overcook it and dry it. It just doesn’t taste as good!

Ingredients (Serves 4)

  • 1 lb pork tenderloin
  • 2 oranges, 1 juiced and 1 sliced
  • 2-3 tbsp bourbon
  • 4-5 large carrots, peeled and cut into pieces
  • 3-4 potatoes, diced
  • 2 tsp cumin
  • 2 tsp paprika
  • Salt/Pepper

Instructions

Preheat oven to 375.

In a large baking dish with a cover, rub pork with paprika and cumin, salt and pepper.

Surround pork with potatoes and carrots, season those with salt/pepper.

Top pork and vegetables with orange juice and bourbon.Place remaining orange slices around pork and vegetables.

Cover and bake 35-45 minutes, or until cooked through. Let stand 5-10 minutes before serving.
