After talking about my meal plan making basics last week I made a beef and bean stir fry inspired by a Better Homes and Gardens All Time Favorites magazine I found when moving. I paged through to get some recipe ideas and saw a great idea for the sauce in a stir fry- 1/4 cup orange juice. Something to add just a bit of sweetness to a sauce. It was delicious!
The butter beans were perfect in this, a little extra protein and substance to the stir fry and the soak up sauce so well!

Beef and Bean Stir Fry

6049421Ingredients (Serves 4)
- 2 tbsp vegetable oil
- 1 lb boneless , skirt or flank steak, cut in thin strips
- 2 cloves garlic, minced
- 1/2 tsp ground ginger
- 3 carrots, thinly diagonally sliced
- 1 head broccoli, cut into small pieces
- 2 green onions, diced
- 1/4 cup orange juice
- 2 tbsp soy sauce
- 1/2 tsp crushed red pepper
- 1 15 ounce can butter beans
Instructions
In a large skillet, heat 1 tbsp of oil. Add in beef, garlic and ground ginger. Cook 2-4 minutes. Remove to a plate.
Add in broccoli and carrots. Cook 2-3 minutes. Add in green onions and butter beans, cook for 1 minute more.
Top with soy sauce, orange juice, red pepper. Stir to combine. Add beef back and cook for about a minute. Serve.
