BBQ Chicken Tacos – Accessorized

Usually, the food I put in my freezer (leftovers) never see the light of day again. I’ll end up throwing stuff out because I have a). no idea what it is b). how long it’s been in there and c). what’s the easiest way to re-heat it. So when there is no more room in my freezer – I start tossing!

This year I am trying to be a little better with that. For one thing, I’m trying to make meals that are the right amount of food for a family of 5 without having a ton of leftovers. I kind of err on the side of having too much, than my family eating dinner and feeling like they are still hungry.

So, when I was thinking about what to bring for my lunch today (I bring my lunches about 99% of the time) – I saw a ziploc bag with leftover shredded chicken (with taco seasoning) from a party at my Mom’s house a few weeks ago. So I threw that in my bag with 2 tortillas. I was running too far behind to see what veggies I had so I decided to accessorize at lunch. How do you accessorize a lunch – visit your closest restaurant with a salad bar!

I am super spoiled because I work near several restaurants with salad bars (a one minute walk) and I can walk to a Whole Foods OR Trader Joe’s! (I know, I’m super lucky!!)

So for less than 2 dollars, I got greens, cauliflower, peppers, kidney beans, garbanzo beans, corn, red onions, and a little cheese. Since the chicken was already flavored with taco seasoning, I decided to spice it up with some Sweet Baby Ray’s! I puffy heart that bbq sauce!

My sister and I love to accessorize our lunches – it’s super cheap and you can get a lot of variety.
