Avocado Buttermilk Pancakes

AVOCADO PANCAKES

I saw this recipe on Pinterest and it sounded pretty interesting. Avocado buttermilk pancakes? I know many people would think it was disgusting – but these were one of the best pancake recipes I’ve ever made. I had it for breakfast every day this week.

(I know the title says “Butter” pancake – it should be “buttermilk”

Calories per serving: 96 calories per pancake

Fat per serving: 3.4

Recipe based on California Avocado Commission recipe. These are light and fluffy and so good!!! They don't taste like avocados - so you can make them and not even mention it!

Ingredients

  • 2 cup low-fat buttermilk
  • 2 large eggs
  • 1 Tbsp. melted butter
  • 1 Tbsp. honey
  • 1 tablespoon sugar
  • 1 tsp. vanilla extract
  • 1 ripe, Fresh California Avocado, peeled and pitted
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt

Instructions

  1. Combine buttermilk, eggs, melted butter, honey and vanilla in a blender container. Blend until well combined. Add avocado and blend until smooth.
  2. Add remaining ingredients and pulse several times, just until dry ingredients are incorporated. Be careful to not over mix.
  3. Heat a lightly oiled griddle over medium-high heat. Scoop batter onto griddle using a 1/4-cup measuring cup. When bubbles appear on the surface of the pancakes flip to other side with a wide spatula. Cook on second side until golden brown.
  4. Serve hot.

If you wanted – you could add a few chocolate chips to these. I served mine with 1 cut up banana on top and sugar free syrup.

In other news – 2 of my kids went back to school. My oldest is a senior in high school and my middle son is a sophomore. I was lucky to get this ONE photo before they left for school.

I want to say Mark was in pre-school in this picture and Paul was in 1st grade.

So – like many people – getting back into the back to school groove has been tough. I have to get up 2 hours before I have to be at work to get them out the door. And since I live less than 2 miles from my office – that’s A LOT of downtime before work. But – just like my twin sister Biz – I have gotten bizzy in my kitchen!

I’ve made awesome breakfasts (like these pancakes), prepped food for dinner so it’s easier to get dinner on the table when I get home, I’ve reorganized my fridge, organized my pantry, checked e-mail, fixed my hair fancy, put on makeup, etc… Kind of a shock since over the summer I slept in until the last possible second before I had to get ready for work.

My daughter starts 6th grade on Monday, so that’s when it will really get busy in the mornings here!
