Month #2 of Taste and Create and I was partnered with TinkuShaji, an engineer, new Mom & cook. I had a blast browsing her site and looking at all the Indian flavors. I could almost smell the curry, chutneys and appetizers. My one challenge? Finding a lot of the ingredients to make her great dishes. So I compromised! I picked a recipe for Sev (a crunchy noodle like dish) and turned it into a delicious quinoa side. With hints of lemon, turmeric and curry and a beautiful bright yellow color.
This side may become a staple in our house!

Lemon Quinoa

Prep Time: 5 Minutes
Cook Time: 20 Minutes

6045742Ingredients (Serves 6-8)
- 1 cup quinoa
- 1 tsp turmeric
- 1 tsp curry (either hot or sweet)
- 1 lemon, juiced
- Salt/Pepper
Instructions
In a saucepan add water, quinoa, turmeric and curry. Cook 15 minutes, or until quinoa is cooked through.
Add to a serving dish and top with lemon juice and salt/pepper to taste.
