For the last few weeks I’ve recorded Rocco DiSpirito’s Now Eat This Show that comes on in the Chicago-land area on Sunday mornings. Of course I am not up at 8:00 a.m. when it comes on, so I record it. Basically he meets with a family to discuss what they are eating, what their downfalls are and recreates meals that are better and healthier.

So he’s made great things, and it reminded me of a cookbook my twin sister gave me with 150 comfort food recipes. Once was for these chocolate chip cookies – I saw 45 calories, and I was like I am going to make these, then I saw the ingredients. 1 can of chick peas? – Huh? Can I make these without any of my kids walking in the kitchen and just have them taste the finished product? I figured even if they hated them – I now have a special treat. So here is what happened:
Before I could make these, I had to run to my Mom’s house and feed her cats since she’s out of town. I called my twin sister to tell her about the recipe. When I told her it had chick peas in it, she said she almost threw up in her mouth! But I still wanted to try them.
The store didn’t have splenda in the bulk form, so I had to get packets, that was probably my first fail. And it called for 3 egg whites to be whipped into stiff peaks, but for some reason, mine would NOT do that even after 10 minutes in my kitchenaid. You place the can of drained chick peas in a food processor with cocoa and agava syrup and blend. It looks like fudge – but I thought if my sister was there – she would have said it looked like poo!
But I still mixed it altogether, the batter was too thin, but the recipe didn’t ask for flour, so I decided to make brownies instead. They turned out great – fudgey, rich, moist – except for 1 thing: it tasted like artifical sweetener – ick! So I’ll go back to the drawing board on this one!
Have you EVER heard of using chick peas to make cookies – or for that matter black beans to make brownies – that’s another recipe in his book!
