Day 9 – #Bigblogmasproject2014

So today’s post is all about healthy food. I’m always on and off the healthy wagon, so of course I am attempting a little pre Christmas diet, ready to make room for the extra helpings of roastys and chocolate over the festive period. With the drop in weather, I thought soup would be the perfect meal for my week in work. I had never made soup before, and am actually surprised at how easy it is to make, I mean very easy…
Healthy sweet potato and carrot soup, (4 Servings):
- 3 Sweet potatoes
- 8 Carrots
- 1 Onion
- 1 Garlic
- 3 Pints of veg stock
I started by peeling and chopping the sweet potato and carrots, then cooked them in an oven proof dish for about 20 minutes until soft. Roasting them in 1 cal spray.
I then cooked the onion and garlic until soft on the hob, added the sweet potato and carrots, then the veg stock, and blended all together.
I like my soups quite thick, so at this point I could of added more veg stock but I preferred not to.
And that’s all I had to do. I added a bit of Cayenne Pepper for a bit of spice, but it was the easiest and maybe the most delicious meal I’ve ever made myself.
