Vrat Special: chatpate aaloo

- 6 medium size boiled Potatoes (aaloo)
- ¼ cup Mint leaves (pudina)
- ½ cup Cilantro leaves (dhaniya)
- 1-2 chopped Green chillies
- 1-2 tablespoon tamarind pulp/paste to taste (imli)
- Chili powder to taste
- ¼ teaspoon Turmeric (haldi )
- Rock Salt to taste (sendha namak)
- ½ teaspoon Cumin seeds (jeera)
- 2-3 tablespoon clarified butter (ghee)
Preparation:
- Wash the potatoes thoroughly. Pressure cook in a vessel over water for 2 whistles.
- Make sure that potatoes are cooked but not overcooked. Remove and peel the potatoes.
- Cut the potatoes into dice pieces. Keep aside.
- Wash the mint, cilantro and chllli thoroughly.
- Grind together the mint, cilantro and green chilies into a fine paste. Keep aside.
Method:-
- In a heavy bottom broad pan heat the ghee.
- Add cumin and when it starts crackling add the chilli, cilantro and mint paste.
- Stir fry till it start giving a nice aroma.
- Now add Chilli Powder and turmeric powder in it and stir.
- Add the tamarind paste, mix well and cook for 2 minutes.
- Add the boiled potatoes and salt, mix well and cook for 3 to 4 minutes.
- Serve hot.
