Upma

Ingredients
- 1 cup semolina (sooji, rava)
- 1 medium sized onion, chopped finely
- 1 green chilly, chopped
- 1 tablespoon split and skinned chana dal (Bengal gram)
- ½ tablespoon split and skinned urad dal(black gram)
- 2 -2.5 cups water
- 1/2 teaspoon mustard seeds
- 1 sprig of curry leaves
- Few cashew nuts
- 2-3 tablespoon oil or ghee
- salt to taste
Method:
- Heat 1 tablespoon. pure ghee / unsalted butter and fry rava, on a medium heat, stirring constantly to light brown color and set aside.
- Now heat 2 tablespoon ghee in a pan and add mustard seeds and allow them to splatter.
- Add the daals : channa & urad & curry leaves to it and fry till they starts to brown a little.
- Add cashew-nuts and onions and fry till they become transparent.
- Add the green chilly, curry leaves. Fry for a minute.
- Now Add water to this mixture and salt. When the water starts boiling, lower the flame and add the roasted semolina to it.
- Keep on stirring while you add the semolina.
- The semolina will absorb water and swell and begin to cook.
- Reduce the flame and simmer the upma for 2-3 minutes.
- Keep stirring so that the upma does not stick to the pan.
- Garnish upma with cilantro leaves.
- If the mixture looks dry, then add some more water.
- If you want a sweeter taste, you can add sugar with salt.
