Tried&Tested: Tom Kerridges Celeriac & Bramley Apple Soup

I’m absolutely loving Tom Kerridges book and have cooked several things from it now. I have found you need to need to be careful as quite a few of the recipes require quite a lot of prep, slightly unusual ingredients or things doing the day before etc.. so its not a great book for spur of the moment recipes, but if you put in the time or the effort it produces great results.

That being said this is one of the more simple of the recipes I have tried so far. This recipe for Celeriac and Bramley Apple Soup was recently featured in the Sainsbruys online magazine and you can find it here

I’ve never been the hugest fan of soups, I find them a little boring and tend to only try unusual flavours or ones with several elements to them, like a french onion, with the onions and the little cheesy croutons…mmmm. I digress sorry, more recently I have tried out a few homemade soups and actually quite enjoyed them so this one defiantly stood out. It has several elements to keep you interested and all of these just kept on giving in every mouthful – new explosions of flavour, the salty blue cheese, crunchy walnuts, creamy celeriac and the sharpness of the apple it really was a very well balanced bowl.  It was simple to prepare, only taking about 50minutes from start to finish.

I’d definitely recommend giving this one a go. I also really like the sound of his Turnip and Horseradish Soup with Crispy Beef – maybe I’ll try this one next.
