Tortellini and Chicken Sausage One Pot Meal!

First off, I have to share some photos. Yesterday, one of my friends posted Pinterest fails, and I couldn’t stop laughing!

Speaking of Pinterest – I was looking for a new recipe for tortellini – didn’t want to make soup, or just top it with sauce, and I came across a recipe from a site called Kevin & Amanda. Turns out it has very few ingredients and I had all of them, so I couldn’t wait to make it.

This makes a good amount of food for not so much money – so I liked that too! They used kielbasa, I used chicken sausage – Al fresco brand

Here is my recipe based off of Kevin and Amanda

2 tbsp olive oil
1 package chicken sausage
2 cloves garlic, minced
3/4 cup chicken broth
1 cup tomato sauce (or your favorite spaghetti sauce)
1/2 cup regular or heavy cream (I actually didn’t have that, so I used skim milk)
9 oz tortellini
salt and pepper to taste
1. Heat 2 tablespoons olive oil in a 12-inch skillet over medium-high heat until just starting to smoke. Add sausage and cook until well browned, about 3-4 minutes per side. Add garlic and stir until golden and fragrant, about 30 seconds.
2. Add broth, tomato sauce, cream, tortellini, and salt and pepper and stir to combine until simmering and bubbly.
3. Cover and simmer over low heat for 12 minutes until tortellini are tender and heated through. Enjoy!!

This was SO GOOD! There were no leftovers – so I take that as a good sign – and this is a SUPER fast meal to put together as well as a one pot meal!

On another note – my niece Jessie owns 2 popular gelato shops in Chicago called Black Dog Gelato. We’ve been anxiously awaiting her appearance on The Food TV networks Sandwich King for months now! It was finally on today. If you don’t know, she is pairing her gelato with a popular donut place in Chicago called Glazed and Infused – pretty sweet combo! When they first came out with it, over 900 were sold – people were in line down the block from her store.
