Happy mid-March, everyone! And happy spring? Can I say that yet? I don’t know about you, but here in Central Texas, I do believe spring has sprung, and I’m loving the warmer weather, and all the pretty blooming things. It’s that time again, and I can’t wait to share the top 5 things that I can’t get enough of this month!
1. Lays Dill Pickle flavored Potato Chips: Are you kidding around? When I saw these at the store, I about fainted with glee. I love all things dill pickle, and as it turns out, these are no exception. They’re like salt and vinegar chips PLUS the sweetness of dill. So good.
2. Trying new things in the kitchen: A couple of nights ago, I decided that it would be a lot of fun to make one of my favorite dishes from Puerto Rico right here in my own kitchen: Shrimp Mofongo. Guess what? It was a lot of fun, and it was CRAZY good. I couldn’t have been more excited. The dish tasted just like those we were getting at the local spots in PR. 3. Lifestyle Changes: That’s right! My husband and I (and the kiddo, by proxy) are making the commitment to get healthier! No more excuses. That also means that I can’t fall back on Hamburger Helper and saying “I don’t feel like it,” to going on walks, and other fit things that fit folks do. So we’re saying hello to spring with more spring in our step with a healthier attitude towards life.
4. Lord Nut Livingston Rebel Mary Peanuts: These Spicy Bloody Mary Flavored peanuts with lemon, celery and pepper are INSANELY AMAZING. SO GOOD. I’m not even kidding you, you guys. These were awesome. I wasn’t expecting anything awesome, but I was intrigued enough to throw them into my basket alongside the Dill Pickle chips, and these were another winner. They actually did have the flavors of a good Bloody Mary, and for that I applaud Lord Nut Livingston. Next, I want to try their Thai Dyed flavor with Thai Curry and Lemongrass. Interesting, no?
5. Road Trippin’: I’ve recapped our road trip with photos already, and even talked about it again in the prelude to the Greenhouse Craft Food post, but I still LOVE road trips! There’s something about hitting the open road, and seeing the changing country side that gets me all pumped. From the beauty of the Hill Country to the desolation of the plains, the landscape was forever changing during our journey. There was no shortage of cows and other interesting sights. The depressing sight of dead or dying towns complete with shanties increased the farther east we went, and they had a strange sort of allure. Each town had a story to tell, and I loved watching it unfold.
