My favorite thing about summer is the salads.
Okay, and the frozen yogurt. And the iced coffee. And the beach days. I digress. Salads are one of my favorite things about my favorite season, and this one just screams summer.
This salad has all my favorites in it. Fruit in three forms (have we reached a consensus yet that avocado is a fruit?), cheese, and seeds.
I tossed this with a simple combination of olive oil, balsamic vinegar, and lemon juice, but any type of vinaigrette or even a creamy dressing would go wonderfully as well.

Ingredients
- 1 cup mixed greens
- 1 cup kale (chopped)
- 1 peach (sliced)
- 1/2 avocado (cubed)
- 1/2oz goat cheese
- 1 heaped tablespoon raisins
- 1 tablespoon pepitas

Add all ingredients to a bowl and toss with dressing of choice
