The Perfect Coconut Rice!

The Perfect Coconut Rice!

Yes, you heard me, this is the perfect coconut rice recipe. It is very simple to make, but it will get you a soft, moist rice that you can pair with curries, fish, hot soups and what more!

In Asia people cannot dine without a bowl (or 2) of steamed rice. It's like for us Italian, we will never have a dining table without some freshly baked bread. There are many ways you can cook rice: simply steaming it, adding lemon zest and olive oil, adding some green onions and eggs.
I love coconut milk, so this recipe makes for me the best rice I could wish for.

I am slowly recovering from my wisdom tooth surgery and this soft rice was just perfect for my sore mouth.

Give it a try, you will become addicted!

Ingredients (makes 2 cups):

  • 1-1/2 cup Jasmine rice
  • 1 tbsp coconut oil
  • 1 cup coconut milk
  • 2 cups coconut water
  • 1 tbsp fresh shredded coconut

Place rice on a strainer and rinse it under cold water until the water runs clear. Let the rice drain completely
