Thandai
Thandai is a milk based drink which is traditionally associated with festivals like Mahashivratri when its prepared as an offering to Lord Shiva and on Holi-a festival of colors.This chilled drink is made of nuts and seeds, is refreshing and quite healthy!!! .

Serves 4-5
1 liter Milk
1Cup Sugar
40g Almonds,can be blanched
50g Pistachios
30g Melon Seeds,can be substituted with Sunflower seeds
30g Poppy seeds ,soaked in half cup milk for an hour
a few strands of Saffron
7-8 Green Cardamom
2 T -Dried Rose Petals
12 Black Pepper Corns, I like peppery spice here!!
Grind Almonds,Pistachios,Melon and Poppy seeds in mortar and pestle to a coarse mixture-I like it this way! It can be made into a fine paste as well.

Separately grind Green Cardamom,Dried Rose Petals and Peppercorns to a fine powder.

Boil milk, add saffron and sugar,keep it on low heat till sugar dissolves.
Add second mix powder to milk and simmer for a few minutes.
Once off the heat add nuts mixture to the milk and mix well.
Serve chilled.
Enjoy this refreshing drink!!!!
