I am definitely struggling with dinner time lately. The weather is so nice and the garden is calling...thus I am ignoring the kitchen. In my post
Saving Money and Planning Ahead Tip #1 I introduced the idea of pre-cooking dried beans and then freezing them. This has become paramount in my spring meal planning. It is easy to grab a jar of beans and make a simple dinner with them. Here is one we have been eating a lot. You could make it more taco like and add the corn chips and cheese but we have been leaving those out and still enjoying this recipe.
Ingredients (serves 4-6)
- 2 cups dry rice
- water or broth
- 1-2 tablespoons taco seasoning
- 1 1/2 cup cooked black beans
- 1/4 cup chopped fresh cilantro
- shredded lettuce, spinach or kale
- salsa
Directions
- Cook rice as you normally do and but add the taco seasoning into the water or broth. Be sure to give it a little stir once and awhile to mix the spices into the rice.
- Once rice is almost cooked add in the black beans so they can be heated up as well.
- Mix in cilantro or save to add on top of each bowl.
- Place cooked rice into a bowl, add lettuce, cilantro and salsa on top.
- Serve.
I would normally add much more lettuce
and salsa but want to give a clear picture of the dish
