Ingredients
- 1/2 cup palm or coconut sugar
- 1/2 teaspoon sea salt
- 1/2 teaspoon baking soda
- 1 teaspoon guar gum
- 2 teaspoon psyllium husk
- 1 1/4 cup white rice flour
- 3/4 cup tapioca or arrowroot starch
- 1/2 cup + 2 tablespoons melted coconut oil
- 2 tablespoons warm water
- 1 teaspoon apple cider vinegar
- 1 1/2 teaspoon gluten free vanilla or almond extract
Directions
- Preheat oven to 375 F and prepare cookie tray.
- In a large mixing bowl combine sugar, sea salt, baking soda, guar gum, psyllium husk, flour and starch.
- In a small bowl combine oil, water, vinegar, and vanilla.
- Add oil, water mixture to dry ingredients and stir to full combine.
- You may also want to use your hands to help dough form into a ball.
- Place dough between two layers of parchment paper and roll until flat.
- Cut into desired shapes and let sit on tray for 5-10 minutes before baking
- Bake for 8-10 minutes.
- Cool on a wire rack.
