Another recipe post today – if I keep this up I’m going to have to change the name of my blog! But this recipe is just too good to keep to myself.
To make enough sticky cola pork for two you will need:
- 330 ml coke
- two small onions chopped finely
- three tomatoes chopped roughly
- two tablespoons of honey
- two tablespoons of worcester sauce
- one tablespoon of smoked paprika
- four strips of pork belly
- basmati rice and green beans to serve
Preheat the oven to 180°C. Fry the chopped onions for about 5 mins before adding the tomatoes and simmer. Add the coke, honey, paprika and worcester sauce and leave for 10-15 mins until you have a rich sauce.
Place your pork belly strips in a casserole dish and cover with sauce. Cook in the oven for approx one hour 15 mins (until sauce is really sticky and meat is done).
Serve with basmati rice and green beans.
