Spinach Soup(Palak Soup)

Spinach Soup

Ingredients:

  • 3 cups chopped spinach (palak)
  • 1 tablespoon roughly chopped garlic (lehsun)
  • 1 tablespoon butter
  • 1/2 cup finely chopped onions
  • 1/2 cup low-fat milk
  • 1/2 cup low-fat milk
  • 1 tablespoon corn flour dissolved in cold milk
  • 2-3 tablespoon fresh cream
  • Salt to taste
  • Freshly ground pepper (kali mirch) to taste

Method:

  1. Heat the butter in a deep and heavy bottom pan
  2. add the onions and garlic and sauté on a medium flame for 3-4 minutes, or till onions turn translucent.
  3. Add the spinach and sauté on a medium flame for 2-3 minutes, or till spinach become soft.
  4. Add 2 cups of water and cook on a medium flame for 5 -8 minutes, while stirring occasionally.
  5. Switch off heat, allow it to cool completely.
  6. Once cooled blend it in a blender to a smooth puree.
  7. Strain the mixture with help of a sieve.
  8. Pour the purée back to the pan,
  9. Combine the corn flour- milk mixture and the cream in a bowl and mix well till no lumps remain, add to the spinach puree, and bring it to a boil.
  10. Serve hot garnished with cream.
