The other week, my local grocery store had a mondo sale on boneless-skinless chicken breasts, so naturally, I got in on that! Sticking to a budget for our family, especially at the grocery store, is a top priority, so when I find ingredients low in price and high in nutrition, I stock up.
But sometimes life and little league games gets in the way, and before I knew it, I had 5 beautiful chicken breasts about to go bad. I wasn't about to let that happen, so I decided to concoct some sort of a delicious marinade, and get the chicken baked. I didn't know when we'd eat it, but it'd be there for a delicious salad, for wraps, or re-heated for dinner.
I mixed together some Kraft Sweet & Spicy BBQ sauce with Smuckers Peach Preserves, salt, pepper and red pepper flakes, and let the chicken soak in the sauce for a couple of hours. I'm sure you can let it sit for 20-30 minutes, or maybe even overnight to intensify the flavor, but 3 hours seemed good to me.
I placed the chicken in hot cast irons, let the breasts sear, and then transfer them into a pre-heated 350 degree F oven for 30 minutes.
When they came out, they were perfectly cooked, juicy and flavorful, and I had AMAZING sweet and spicy bbq chicken!
Smoky, sweet, spicy, tender, savory and wonderful, these chicken breasts went into making a spectacular salad for my lunch that day, and later, became our dinner after a late night at the Little League fields.
Once diced, the chicken even became a hit with the baby, with a side of rice and peas that I pureed for him.
