I love warm spices in baking especially during Christmas. I guess they remind me of a few dutch cookie recipes (Speculaas and Pepernoten.) I definitely think it is the Anise that makes these taste so great. They are a great addition to a coffee/tea break.
Ingredients
- 1/2 cup rice flour
- 1/2 tapioca or arrowroot starch
- 1 cup sorghum flour
- 1 tablespoon ground flax seeds in 2 tablespoons water
- 1 teaspoon psyllium husk
- 1/2 tablespoon baking powder
- 1 teaspoon guar gum
- 1 teaspoon cinnamon
- 1/4 teaspoon anise (or to taste)
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cloves
- 1/4 teaspoon sea salt
- 1/4 cup warmed coconut oil
- 1/3 cup maple syrup
- 1/3 palm sugar
- 1 teaspoon gluten free vanilla
Directions
- Preheat oven to 350 F.
- In a mixing bowl combine all dry ingredients except palm sugar.
- In a separate bowl combine coconut oil, maple syrup and vanilla until fully blended.
- Add wet ingredients to dry and stir until combined.
- Roll dough into balls and place on cookie sheet. Flatten just a little with your palm.
- Bake for 10-12 minutes.
