Slow Cooker Chicken Spaghetti

It's no secret I love my slow cooker. I received it a couple years ago as a wedding gift, and have fallen in love with it. Just the other night, I whipped it out and threw a bunch of stuff together, hoping for the best, and luckily, the best dang chicken spaghetti came out. So without any fuss or further ado, here's a recipe for those days that you don't feel like slaving in the kitchen, but still want to have something absolutely delicious on the table for dinner.

Get out your slow cooker! This recipe is easy, delicious and exciting, and will quickly become one you'll want to save.

  1. 3 bell peppers (I used 1 each of green, red, orange. There was a pepper sale at my local grocery store)
  2. 2 boneless-skinless breasts
  3. 1 jar of your favorite spaghetti sauce
  4. 10 cherry/grape tomatoes
  5. scoop of ricotta
  6. salt
  7. pepper
  8. red pepper flakes (if you want)
  1. Salt and pepper the chicken.
  2. Cut all of your peppers into thick strips, and place on the bottom of the slow cooker.
  3. Place your chicken over the peppers.
  4. Pour the sauce over everything.
  5. Sprinkle some red pepper flakes into the mix.
  6. Set your cooker on low for 6 hours.
  7. With 2 hours to go, add the tomatoes.
  8. With 1 hour to go, add the ricotta.
  9. When the chicken is done, use tongs or some forks to shred.
  10. Serve over cooked spaghetti noodles.
