So, last night I made Peppercorn Beef Tenderloin and it was amazing. The recipe came from Pioneer Woman! I love her :-) Anyhow, I needed a good side for it. So I roasted some garlic, added leftover cream cheese, bacon, cheddar, and milk. Whipped it up with the potatoes and created this. It was pretty darn good.
Bacon Cheddar Mashed Potatoes
8 potatoes chopped, boiled and mashed1/2 C Cream Cheese1/4 C Crumbled Bacon1/2 C Cheddar4 cloves of roasted garlic.
Roasted GarlicCut the bottom of the garlic. Sprinkle olive oil, sea salt and cracked pepper. Put it on a cookie sheet and cover it. Let it cook till its roasted and smooshy!
In the bowl mix your mashed potatoes. Add bacon, cream cheese, cheddar cheese, and roasted garlic. Whip it till its smooth! Eat and enjoy!!!
