I have designed all the recipes and taken all the pictures
It was a fun project to work on which gave the chance to experiment new recipes and try some amazingly, high quality products like Alce Nero organic pastas, sauces, honey and extra virgin olive oil, as well as Aiam Brand coconut oil and tuna!
Oh, almost forgot to say that the book is bilingual: Chinese and English!

Now, time to cook! Today I am going to share with you this easy ravioli recipe. Enjoy
Ingredients (serves 2):
- 24 ravioli sheets
- 125 gr fresh ricotta cheese
- 1 whole egg
- 1/4 cup grated mozzarella cheese
- 2 tbps + 2 tbps grated Parmesan cheese
- 1/2 tsp dry parsley
- 1/2 jar of Alce Nero Tomato and Basil pasta sauce
- 100 gr bacon (lardon)
Grab some French lardon (or fresh pancetta)
fry it up in a skillet until crispy (no need to add oil), them move it to kitchen paper
Grate up some mozzarella cheese
Crack open one egg and divide the yolk from the white
In a bowl combine ricotta cheese, mozzarella, Parmesan cheese, the chopped lardon, salt, pepper and the egg yolk
Now take he ravioli sheets (I used the one for making Chinese Jiaozi)
In the center or each sheet place one small ball of filling
brush some egg white along the edges and sealed your raviolo. Then using a fork gently press down the edges
Repeat until you have used up all the filling and sheets
Bring up a pot of water to boil, and cook your ravioli for about 5 minutes. Drain them out
Grab some tasty organic tomato and basil sauce
Spread a spoon full across your serving plate
Lay the ravioli and sprinkle them with grated Parmesan cheese and dry parsley
serve them immediately
enjoy with a good glass of red wine
