If you love a good avocado on toast, you're going to really like this recipe for smashed pea & avocado toast with asparagus. Trust me, it's a good one!
I went a little while without having much avocado. I know...what the hell was I thinking? A good avocado is just SO good. Smashed on toast. Stuffed and baked. Or sliced with my scramble. In a warm salad. In a burger. Mmm it's just such a creamy goodness you can add to so much! It can be expensive, and that's one of the reasons I probably stopped picking them up. But having been to Ridley Road Market in Dalston recently, acquiring a whole bowl of little avos for just £1 this is about to change. Aldi is also down the road, and when they have them in, they're also not too bad.
So at home a couple Sundays ago, I started playing around with my smashed avocado. I was thinking about what I could add to give it some extra texture and freshness. Something a little seasonal (well just, as I know we've just come out of spring, but peas are good all year round). Something healthy, yet dreamy so I could satisfy those avocado cravings and get more of my 5-a-day with my brunch/lunch.
I ended up with this beautiful recipe. Creamy avocado, a la dente mashed peas, mixed seeds for some extra crunch and natural protein, a seedy slice of toast, all topped with delicious buttery fried asparagus.
I like my avocado piled up, but you could easily spread across two pieces of seedy toast too. It all depends how you like it. What you crave. It would be fab with a little feta or grated parmesan too!
