Recipe: Simple Baked Fritata

I’ve been experimenting a little more recently with lunches, wanting to be a more creative whilst also saving pennies – I do love packed lunches, no having to pop out and think what you want at the time; shopping when hungry is lethal! And the cost really does add up!

Last time I was home I spotted a dish my mom had prepared on the side. It looked like a baked dish and naturally intrigued as to what my mom created – she’s become a lot more experimentive, which is fab! – she let me in on her simple recipe.

It really is super easy – all you need is 2 eggs per portion, a drop of milk if you fancy, perhaps a couple baby potatoes and veggies! You can pop some meat in if you fancy …and that’s it!

In mine this week I used potatoes, diced bacon, red peppers and red onion. But you can choose pretty much any combination of veggies! (Do be cautious that some vegetables can add water to the dish, just like they would an omelet – such as tomatoes).

Keeping my fritata in an airtight container from the evening I baked it, I will keep it for the following 2 lunches. (Not too sure about keeping it longer than this and don’t want to say that I’m an expert in the field of food storage and recommended times to keep cooked items. So only keep as long as you think you should!)

And here’s how to make it:

Boil the potatoes, but don’t let them get too soft as you need to slice.

Fry or grill the onion and red pepper. If you meat isn’t already cooked, cook this too. You can do this with the veggies or by itself. It will all end up in the same dish at the end.

Preheat the oven to Gas Mark 6/200 degrees.

Line a tray/dish with foil. Slice your cooked potatoes and lay in the bottom of the dish.

Sprinkle over the meat and pour on the veggies. (I did add a drizzle of Habanero Tabasco Sauce into mine between adding the meat and the veggies – this added a great extra kick, and I didn’t need any sauce to go with it at lunch!)

In a glass crack 4 eggs and beat. Add the dash of milk and stir before pouring over your ingredients in the lined dish.

Before cooking

Pop in the center of the oven for 20-30 mins – until the top is brown and the center of the top looks cooked. You can always cut into it to make sure the egg is cooked all through.

And that’s it! Wait for it to cool down, slice in two and pop into containers for work.
