Popovers (Dairy, Gluten/Grain and Refined Sugar Free)

Need a little something to go with your soup or stew?  This popover recipe is very versatile.  By adding some sweetener, this recipe will also work as a dessert with some custard, jam, pudding or cream.
Popovers (Dairy, Gluten/Grain and Refined Sugar Free)

Ingredients
  • 5 eggs
  • 1 1/2 tablespoon grapeseed or olive oil
  • 1/2 cup coconut milk
  • 1/2 teaspoon apple cider vinegar 
  • 1/4 teaspoon sea salt
  • 3 tablespoons coconut flour
  • 3 tablespoons tapioca starch
  • 1 teaspoon gluten free vanilla (optional)
  • 3 drops liquid stevia (optional)

Directions
  1. Preheat oven to 400 F.  Grease muffin cups.
  2. Combine eggs, oil, milk and vinegar.  
  3. In a separate bowl sift flour, starch and sea salt.
  4. Bake for 20 minutes, turn oven down to 375 F and bake another 5 minutes or until golden brown.
