So as many of you will know, it is Stoptober. Now I don't smoke, never have, but I wanted to do something. So I decided to give up beloved chocolate. Now I am a bit of a sweet tooth and am looking for an alternate to chocolate. A firm favorite of mine has always been a good lemon drizzle, so I thought I would share my recipe with you today.
You will need:120g Butter120g Caster Sugar2 Large Eggs1 Lemon120g Self Raising Flour20g Icng Sugar20mls Cold Water
Method: Preheat your oven to 180 degrees c and line a medium loaf tin.Grate your lemon, removing all the zest.Mix together your sugar and butter until well combined. Add in both your eggs and mix well.Add flour, folding it into the mixture.Finally add the zest and mix well.Pour into the lined loaf tin and put in the oven for 20 minutes.
While that is baking you need to make your syrup. Squeeze all the juice into a dish and add in the water and icing sugar. Mix well until there is no lumps.
As soon as the cake is out of the oven take a skewer and stab loads of small, tiny, holes in it. All over the cake, this gives the syrup somewhere to go. They pour over the syrup and let in stand in the tin for at least 3 hours. It should be fully cooled before you take it out of the tin.
