The other day before heading out to our local Harris Teeter to do the weekly grocery shopping, I asked the usual question of my husband: What sort of stuff do you want for dinner this week? See, we've decided to do more eating in rather than out as of late, and despite still not having a working oven, I've accepted the challenge to cook delicious meals for my family each night, rather than resorting to OrderUp or spending lots of money on a night out more than once a week. AKA get ready for a lot more recipes here on SD&S!
So when I ask my husband that same question, week after week, I don't usually get as pointed a response as I did this time. Instead of, "Oh, I don't know. Something good?" He said, "I want pasta with homemade vodka sauce, some pulled pork, meatloaf, and enchiladas." Oh. Ok. That's specific... But homemade vodka sauce? I didn't even know where to start. I didn't even know if vodka sauce really had vodka in it. #Clueless. (And I'll get to the pulled pork another time. That recipe is WORTH IT.)
It seemed exciting to try something new, so I hopped on the Google machine, and discovered that this distinctly pink, creamy, robust and some-what spicy sauce does indeed require vodka, and a healthy measure of it to be sure. I read several different recipes, and took bits and pieces from them to create a composite, and then put my own twist on the whole thing. We've always enjoyed the Bertolli jarred kind, so I was pretty fired up to try my hand at my own homemade version.
The result was amazing. This sauce was velvety smooth, exquisite, luxurious, heavenly and every other adjective to say it was amazing.
I tossed in some al dente penne and we had a hearty and mouth-watering meal on our hands. Even the little guy said it was awesome, and has since requested it again. In my opinion, that's the sign of something ACTUALLY being good. (And for those of you wondering, yes, the alcohol cooks off.)
