Spaghetti Sauce

A hearty spaghetti sauce that goes great on top of spaghetti squash.Ingredients
- 2lb Italian Sausage
- 1 medium Onion
- 4 cloves Garlic (Obviously not included when preparing as a paleo dish)
- 28oz Tomato
- 12oz Tomato Paste
- 30oz Tomato Sauce
- 2 cups Water (Can use less dependent on simmer time.)
- 3 teaspoons Basil
- 2 teaspoons Dried Parsley
- 2 teaspoons Brown Sugar (Obviously not included when preparing as a paleo dish)
- 1 teaspoon Salt
- 1/4 teaspoon Red Pepper Flakes (Be sure to adjust for whether using spicy sausage)
- 1/4 teaspoon Black Pepper
- 1/4 cup Red Wine (Omit when preparing paleo...Although this is what takes this recipe over the top!)
Directions
Step 1 In a large stockpot, brown sausage. Be sure to break it up into manageable pieces.
Step 2 Add onion and continue to cook until onion becomes translucent.
Step 3 Add garlic, tomato, tomato paste, tomato sauce, and water.
Step 4 Add basil, parsley, brown sugar, salt, red pepper, and black pepper.
Step 5 Stir well and barely bring to a boil.
Step 6 Stir in red wine.
Step 7 Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce.
