A creative way to enjoy the flavor of Alfredo sauce using cauliflower.Ingredients
- 1 head Cauliflower (cored and chunked)
- 2 tablespoons Olive Oil
- 1 Shallot (minced)
- 1 cup Chicken Broth
- 1/4 cup Coconut Milk
- 3 tablespoons Shredded Parmesan ((optional))
- Salt & Pepper (to taste)
Directions
Step 1 Steam cauliflower.
Step 2 While cauliflower steams, heat oil over medium heat in medium sauce pan.
Step 3 Add shallot and sauté for 2 min.
Step 4 Add chicken broth and bring to temperature
Step 5 Add cauliflower and chicken broth to blender along with coconut milk and parmesan.
Step 6 Blend to correct consistency. You may need to add more coconut milk .
Step 7 Salt and Pepper to taste
Note
You may elect to take a strict approach and omit the parmesan cheese. I will tell you, that the parmesan did add a lot of flavor to my wife's plate.
One mistake we made when making this was trying to use an immersion blender, rather than transefering everything to a full sized model. Our sauce came out a bit grainy as a result. Follow these directions to achieve the best result.
