I usually don't like breakfast. I don't ever eat it. Well, that's not true. I EAT breakfast, but my breakfast is usually cold left-overs. I'd choose a cold piece of pizza over pancakes any day. That's right. Give me a bowl of spaghetti from the other night. You can keep your cereal.
But recently, I've been trying to be a smidge healthier when it comes to my eating habits, and part of that is to try NOT to eat pasta 3 times a day. Sure it's delicious, but not quite what my body needs to thrive at it's best.
So that's why I started to experiment with breakfasts. Ones with EGGS. How breakfasty of me! Through this experimentation, I've discovered quite possibly one of the most delicious day-starters of life. And it's healthy because... kale.
And yes, it does look gorgeous. But let me tell you, it's easy. It's also super fast, so if you're starving, you won't be slaving over the stove for too long.
I also have been having fun changing the components up. I have tried substituting shelled edemame for the kale, and don't get scared. You can find a bag of frozen shelled edemame right in your grocery freezer. The soy beans have a great texture and flavor, as well as a punch of protein. I also included peppers and onions with that recipe.
Sometimes I'll throw the kale and egg mixture into a tortilla, and make a taco out of it. Delicious.
However you choose to make it, it's a delicious way to start your day.
