My Favourite Breakfast…

Being National Breakfast week and seeing all these delicious brekkie dishes publicised across social media and those splattered across the World Wide Web got me thinking about my own favorite breakfast.

Ok so it’s a tough call and I must say I do love a good trip to The Breakfast Club for their avocado and eggs on toast! However I was thinking more of the breakfasts I make at home, those indulgent mornings or after gym re-energisers which I really do love to devour.

And here it is…Gluten Free Pancakes. Yeah you heard right, those protein filled squidgy, moist, melt in the mouth, delicious perhaps not so circular pancakes, preferably with a spoonful of yoghurt (preferably greek) and a drizzle of honey. Absolute heaven! And no I don’t live by a gluten free diet, but these really do hit the spot and are great for after gym.

And they are so easy to make! Just two eggs and one large banana…plus I like to add a little shake of cinnamon…but they’re that simple and cheap!

So here’s how to make my favorite breakfast.

Mash banana in a bowl. Leave to the side.

Crack two eggs into a glass and beat.

Combine both together well (If lumpy it will go like scrambled eggs with chunks of banana), with cinnamon to flavor – I tend to use a blender at this point – and the batter is ready!

I know my eggs aren’t beaten…They don’t have to be if using a blender..But I still broke them into a glass first to avoid the shell in batter issues.

Heat a little oil in a frying pan. Keep at a low heat as the pancake batter does tend to burn quite quickly. Pour a little batter into the pan and keep an eye on it to see when the underneath is golden and flip – I use a spatula, you don’t need to be a skilled pancake chef and flipper.

Cook both sides until you’re happy and lay on a plate. Keep going until you’ve cooked all your pancakes…I now cook two at a time, but don’t worry even if only warm they’re still delicious.

Serve in a stack, spoon some yoghurt on top, drizzle some honey and there you have it…my favorite home-made brekkie.

Ok, so this pancake stack actually has fat free vanilla yoghurt on with some oat heart cereal for extra crunch (Betavivo, proven to reduce cholesterol – always trying to be healthier!)

What’s also good about this is due to the eggs and Greek yoghurt on top it’s a great protein breakfast for after gym to help repair and rebuild muscles!
