Mushroom Soup

Ingredients:
- 200 grams Button mushrooms
- 11/2 cup Milk
- 2 tablespoons Butter
- 1/4 cup Onions roughly chopped
- 3/4 cup Fresh cream
- 1 tablespoon Refined flour (maida)
- Salt to taste
- Pinch of white pepper powder
- 2 Bay leaves (optional)
- 4-5 Peppercorns(optional)
Method:
- Boil the milk along with bay leaves and Peppercorns. Strain and keep the milk hot.
- Heat the butter in a deep pan; add the onions and sauté on a medium flame for 1-2 minute.
- Add mushrooms and sauté on a medium flame for 1 minute.
- Add refined flour and sauté till there is no raw flavor coming from flour, taking care that the flour does not get burnt.
- Pour 2 cups of hot water slowly and stir continuously to avoid lumps from forming. Cook it on a medium flame five minutes or till the mushrooms gets cooked.
- Allow it to cool slightly and blend in a mixer to a smooth transfer the puree into the deep pan,

- Add the salt, and milk, mix well and bring to a boil.
- Add the fresh cream and white pepper powder. Stir well.
- Serve hot.
