Mushroom Soup Recipe, How to make Mushroom Soup, Soup Recipe

Ingredients:

  • 200 grams Button mushrooms
  • 11/2 cup Milk
  • 2 tablespoons Butter
  • 1/4 cup Onions roughly chopped      
  • 3/4 cup Fresh cream
  • 1 tablespoon Refined flour (maida)             
  • Salt to taste
  • Pinch of white pepper powder
  • 2 Bay leaves (optional)
  • 4-5 Peppercorns(optional)

Method:

  1. Boil the milk along with bay leaves and Peppercorns. Strain and keep the milk hot.
  2. Heat the butter in a deep pan; add the onions and sauté on a medium flame for 1-2 minute.
  3. Add mushrooms and sauté on a medium flame for 1 minute.
  4. Add refined flour and sauté till there is no raw flavor coming from flour, taking care that the flour does not get burnt.
  5. Pour 2 cups of hot water slowly and stir continuously to avoid lumps from forming. Cook it on a medium flame five minutes or till the mushrooms gets cooked.
  6. Allow it to cool slightly and blend in a mixer to a smooth transfer the puree into the deep pan,

  8. Add the salt, and milk, mix well and bring to a boil.
  9. Add the fresh cream and white pepper powder. Stir well.
  10. Serve hot.

Note:

  • Do not puree it to a very fine consistency.
  • The soup should have a nice texture. Bring it to a boil, correct consistency by adding more milk or water if required.
