Ingredients
- 1/3 cup hulled Millet
- 300g cut into florets Cauliflower
- 1 cup frozen Peas
- 1/2 cup Ricotta
- 1/3 cup Milk
- 1/2 cup plain Flour
- 1 tsp ground Cumin
- 2 tsp grated Lemon rind
- 2 tbs chopped Parsley
- 1/4 cup chopped Mint leaves
- 2 tbs olive Oil
- 2/3 cup Yoghurt
- Lemon wedges
How to make Millet, Cauliflower, Pea and Ricotta Fritters
Step 1: Add millet in a saucepan and stir until becomes aromatic. Step 2: Add 1 cup of water and boil until water is absorbed, then set aside covered. Step 3: Meanwhile, boil cauliflower in water for 5 minutes, then add peas when cauliflower becomes a little firm. Step 4: Drain well and mash with a fork well. Keep aside to cool. Step 5: In a bowl, whisk ricotta and milk, and gradually add flour and cumin. Step 6: Stir in millet, cauliflower mixture, rind, parsley and 2 tbs of mint well. Step 7: Heat oil in a pan and cook 12 portions of fritter mixture from each side until turns golden.
