Ingredients (serves 3-4 people)
- 1 tablespoon olive oil
- 1 small diced onion
- 1/4 teaspoon cayenne
- 1/2 teaspoon turmeric
- 1/2 teaspoon garam marsala
- 1 1/2 cup red lentils
- 2 1/2 cup water
- 2 chopped smoked sausage
- 1 diced tomato
- 1 cup chopped kale
Directions
- In a large frying pan heat oil.
- Fry onion for 3 minutes until translucent. Add cayenne, turmeric and garam marsala and heat for 1 minute, stirring to bring out flavours.
- Add water, lentils, sausage and tomato. Cook on medium heat for 10 minutes, add kale and simmer for another 5 minutes until lentils are soft.
- Serve.
