Lemon Rice

Lemon Rice

Cooking time: 15 minutes
Servings: 4

Ingredients

  • 11/2 cup Rice boiled
  • 3 tablespoons Lemon juice
  •  2 tablespoon oil
  • 1/2 teaspoons Mustard seeds
  • Pinch of Asafoetida
  • ¼ teaspoon Fenugreek seeds (methi dana)
  • 1/2 teaspoon Split black gram (dhuli urad dal)
  • ½ teaspoon split bangal gram (chana Dal)
  • 1 spring of Curry leaves
  • 2-3 Whole dry red chillies broken
  • ½ teaspoon Turmeric powder
  •  1-2 tablespoon Peanuts
  • Salt to taste

Method 

  1. Heat the oil in a wok. Add mustard seeds, hing, methi, urad dal and sauté till the dal turns
  2. Add curry leaves broken red chillies, turmeric powder and peanuts and continue to sauté.
  3. Add rice and salt and mix.
  4. Add lemon juice and mix well.
  5. Cook on low heat till the rice gets heated through and serve hot.
