Lemon Bars For A Midnight Snack | Recipe

When it comes to me, and midnight snacking, i’m a mess, and um…well…lets just not even talk about it.

For the fact that hopefully, yes hopefully, i’ll get married someday, not soon, but someday, I feel a sense of slight embarrassment for my future husband, as the bed will be like one, big candy store, or snack store for that matter.

 Aside from one of my top favorite flavors always being “mint”, growing up, another  favorite flavor at the top of the charts has always been “lemon“, and I totally mean ANYTHING lemon, I have to have, HAVE TO HAVE. Lemon drops, lemon candy, lemon bread, lemon whatever, i’m totally having it, whether it’s filled with carbs or not.

As a kid, my mom would constantly make lemon bars, and to this day, lemon bars have been my favorite go-to, i’m depressed { just kidding }, snack.

So, I felt like I needed, NEEDED, to share this recipe with you guys on the blog.

So, here you have it.

How To:

Crust:

+ 1 cup of all-purpose flour

+ 1/8 t. salt

+ 1/2 cup of confectioner’s sugar

+ 1 stick of meted butter

Filling:

+ 2 large eggs

+ 3/4 cup of sugar

+ 11/2 t. of all-purpose flour

+ 6 T. fresh lemon juice

+ 2 t. finely grated lemon zest

Directions:

1. Preheat oven to 325* 

2Spray a 8×8 inch baking pan

3. Mix flour ,salt, confectioner’s sugar, in a medium bowl

4. Stir in butter to form a dough

5. Press dough into the bottom of the pan

6. Bake until the bars are pale golden, for about 20 minutes

7.  While the lemon bars bake, whisk eggs, sugar, flour, lemon juice, and zest in a medium bowl

8. Remove the pan of lemon bars from the oven

9. Add the lemon mixture and continue to bake until about 20 minutes longer

10. Let the lemon bars cool to room temperature. Then cut the lemon bars into squares and serve.
