Ingredients (serves 4-6)
- 1 cup cashews
- 1 cup water
- 3 chopped and washed leeks (white and light green parts only)
- 6 strips of chopped bacon
- 3 large portabella mushrooms
- 2 cups chicken broth (vegetable broth and even just water may work)
Directions
- Soak cashews in 1 cup water for at least 5 minutes and then puree until smooth.
- In a large pot heat bacon, leeks and mushrooms on medium to low heat and sauté until leeks are soft (3-5 minutes.)
- Add puréed cashews and chicken broth.
- Simmer for another 10-15 minutes.
